Clayhill make their own still wines on site along with grape juices, apple juices and liqueurs. Sparkling wines are made at nearby New Hall Vineyard. Original plantings of Chardonnay, Pinot Noir and Auxerrois in 2006 have been joined by new vines, which include Bacchus as well as some other small trials. The Chardonnay and Pinot Noir are Burgundy clones, which makes them suitable for high quality still wines when ripening conditions allow. The smart new tea room opened in 2017.
